Who provided the fish, who provided the beef, who provided the chicken, the oysters, the mussels, the lamb, the cheeses, the dairy, the veg. And, you can guarantee none of them are but from a few kilometers away and that they delivered their wares that very day.

Tipping is different in Ireland. Servers are paid a living wage, so tipping is a courtesy, not a necessity. Servers would be pleased with a tip of ten percent. It's best to leave your tip in cash, even if you're paying with a card.
